Method

Step 1

Heat oil in a large heavy-based saucepan over medium heat. Cook onion, celery and capsicums, stirring, 6 mins or until softened. Add chilli, garlic, paprika, coriander, cumin
and oregano. Cook, stirring 1 min or until fragrant.

Step 2

Add stock, tomatoes and beans to pan. Bring to the boil over high heat. Reduce heat to low. Simmer, stirring occasionally, 15-20 mins or until thickened. Season.

Step 3

Serve the chilli bean mixture topped with grated cheddar, corn chips, sour cream, lime wedges and coriander.
