Rolled meatloaf with pumpkin & brussels sprouts

Method

Step 1

Grease a 20cm x 10cm loaf pan.

Step 2

In a bowl, combine mince, breadcrumbs, egg and sage. Season with salt and pepper.

Step 3

Place a large sheet of plastic wrap on workbench. Press mince mixture into a 30cm x 18cm rectangle. Arrange cheese, pumpkin and sprouts on top. Using plastic wrap to help, gently roll up from the short end to encase filling. Gently lift into pan, removing plastic wrap.

Step 4

Top with bacon slices, pressing to adhere.

Step 5

Cook in a 180°C preheated oven for 40 mins. Brush with barbecue sauce. Cook a further 10-15 mins until cooked through.

Step 6

Serve sliced, with carrots and beans.
